Happy Festival of Lights to our friends and family!
Our receptionist Sandy, who recently shared her amazing recipe for Vegetarian Stuffed Cabbage in celebration of Rosh Hashanah, has brought some more fabulous holiday fare to our table with her family’s recipe for jelly cookies!
I love giving gifts around Chanukah to all my friends and family members. One way I try to incorporate this holiday tradition is to give gifts using essential oils. It symbolizes on how a one-day supply of oil somehow lasted eight days back in the ancient times of Jerusalem. Another way of using oils for gift giving would be to buy essential oils which everyone enjoys using in potpourri or using the essential oils by adding them to a bath.
In the spirit of the season, she also shared her family recipe for jelly cookies:
My family loves when I make them sugar cookies with all different flavors of jams in the middle. I usually use flavors like apricots, raspberry, peach and pineapple. The cookies come out crisp and delicious.

- 1. Preheat oven to 350°F. Melt you coconut oil, either in a pot on medium heat or in the microwave.
- 2. In a medium mixing bowl, combine your dry ingredients. In a separate bowl, combine the wet ones (minus the jelly/jam). Combine and mix well.
- 3. Use a teaspoon to scoop the batter onto a baking sheet. Make a small divot in the top of each cookie and fill with a scoop of jam/jelly.
- 4. Bake for 20-25 minutes. Let cool, serve, and enjoy!
