Forget that mid-afternoon crash.
We all know that feeling, when 3 o’clock comes around and time starts to drag to a seemingly impossible crawl. This is the time when most of us will grab that next cup of coffee, or pop over to the vending machine for a snack to help get some semblance of energy to finish up your day.
Recently, you may have seen our awesome list of 5-day’s worth of healthy lunches. Let’s add healthy snacks to that list as well–ones that are packed with omegas, protein, and fiber to help give your body a natural source of energy.** We’re talkin’ about these vegetarian-friendly Date Balls, fresh from Julie’s Kitchen!
Grab the recipe below and be sure to let us know how yours turned out!
- 1. Chop nuts on high in a food processor until fine. We recommend going as fine as possible, almost turning the nuts into a flour-like consistency. Place in wide bowl.
- 2. Blend dates, honey, and lemon juice in food processor until chunky paste forms. Move into a separate bowl.
- 3. Use your hands to roll the date mixture into balls, about 1 teaspoon in size. Roll into the nut powder, coating the balls evenly. Then roll into any additional toppings, if desired (see notes below).
- 4. Place balls onto parchment paper-lined cookie sheet and refrigerate for about 2 hours. Bring 1 or 2 to work with you during the week for a pep of energy during the day. Enjoy!
