Today’s vegan-friendly recipe for Zucchini Marinara in the Raw comes straight from Julie’s Kitchen. Some of our longtime readers may remember this recipe from our Savory Summer Recipes last year, and it was such a hit we wanted to share it again in case some of you missed out on (or needed a reminder of) the recipe!
This dish is so easy, delicious, and nutritious! By keeping the ingredients “in the raw,” the nutrients of these veggies that may be destroyed in cooking are kept intact. Many people have been switching to raw diets in their path towards their healthy lifestyle, and we believe this recipe is perfect for beginners who are looking to start their own raw vegan journey… or even for those who just want to enjoy a fresh, veggie-licious meal any time of day!
- 1. In a food processor or blender, add all ingredients except the zucchini and pulse until the texture is chunky and ingredients are well-mixed.
- 2. Pour over zucchini and stir to mix.
- 3. Serve & enjoy!
