What You’ll Need
+ 1 Whole Wheat Tortilla
+ 2 Eggs
+ Handful of Kale
+ Swiss Cheese (sub for preferred)
+ 1/2 teaspoon Avocado Oil
+ Salt and Pepper
How To Make
Preheat your oven to 350 degrees.
+ First, make your eggs and kale. In a skillet over med-high heat, scramble your eggs with 1/2 teaspoon avocado oil and mix in the kale. Cook thoroughly.
+ Take eggs and kale off the heat. Set aside.
+ Place into your whole wheat tortilla with a slice of swiss cheese on top sprinkled with salt/pepper, and bake in the oven for 10 minutes.
+ Remove and enjoy!
