To alleviate a little stress and take some thought overdrive off your plate (pun intended), we’ve put together a list of 3 one pot recipes that are super low maintenence and delicious. This way, you can do what you need to do, and not worry about the simpler things like food.

Recipe 1: One Pot Swedish Meatballs & Pasta

What You’ll Need:
Meatballs:
1 pound ground beef
½ cup seasoned bread crumbs
½ finely minced onion
1 egg
½ tablespoon salt
½ tablespoon pepper
2 tablespoons canola oil
Sauce:
2 cups beef broth
2 cups milk
½ tablespoon salt
½ tablespoon pepper
1 tablespoons Worcestershire sauce
4 cups egg noodles
Garnishes:
1 cup shredded Parmesan cheese
½ cup chopped parsley
How To Make:
First form meatballs by combing together the ground beef, breadcrumbs, onion, egg, salt, and pepper.
Add canola oil to the pot on the stove, warming it up.
Shape the meat mixture into balls.
Place in the pot, roll around to cook.
Next, add in the beef broth, milk, salt, pepper, and Worcestershire sauce. Let this boil. Add in your noodles.
Let this all cook thoroughly and once creamy goodness happens — time to eat!

Recipe 3: Sauteed Kale With Whole Grain Pasta and Lime Shrimp
What You Need:
+ 1/2 lb Medium Sized Shrimp
+1 Bunch Kale
+ 3 cups Whole Grain Pasta
+ 1/2 tsp Salt
+ 1/2 tsp Pepper
+1 tbsp water
+ 2 tbsp 100% Organic Ghee
How To Make:
For the pasta, bring a pot of water to a boil over med-high heat. Add in pasta once boiling, cook until tender.
For the kale, add 1 tbsp water to a skillet, and 2 tbsp 100% Organic Ghee. Let heat. Add in the washed kale. Season with salt and pepper. Remove from heat when wilted.
In a separate skillet, add another 1 tbsp of ghee, salt, pepper and then add your *washed and cleaned* shrimp to the mix. Let all cook together. Squeeze the juice of one lime over the skillet.
When all done, combine all the items and serve!
