Ah, Monday – after a long weekend sometimes we need something a little special to get us through the day. This cauliflower “mac” and cheese is the perfect healthy alternative to one of our favorite comfort foods. It makes a great side dish for dinner on Sunday night and then can be transitioned into a tasty and cheesy lunch to help get you through your case of the Mondays.
We love these chicken lettuce wraps. They’re delicious and light and not hard to prepare the night before. Simply prepare your chicken the night before and bring it to work with some lettuce leaves to assemble at work. We find that these tasty Asian-inspired wraps are easier on our wallets than calling to the nearest takeout place to celebrate Thai Tuesday.
What is it about Wednesday? The weekend is so close yet still so far! Especially during the cold weather months, we want something warm to get us through the afternoon. Prepare this delicious butternut squash soup to bring in a thermos and enjoy a comforting and tasty afternoon meal to help you power through the last half of the week.
Parfaits are traditionally considered desserts and yogurt parfaits are typically a great option to jazz up our breakfasts.
